Sometimes labeled Canadian broccoli, is a purple-stemmed kale with flat, wide leaves and scraggly edges. The purple stems are somewhat fibrous, so it's best to remove them. That being said, the leaves have a mild, sweet, earthy flavor, which makes them a good choice to toss into salads too.
